I was lucky to take a 2-week "Intensive" Permaculture Design class at Regenerative Design Institute in Bolinas (near San Francisco/Pt. Reyes National Sea Shore). The 17-acre farm is called Commonweal Gardens and was created out of an over-grazed grassland canyon within jogging distance of the shore.
